Rudolph Cupcakes

- Pre-heat your oven to Fan Force 150-160 degree celcius. Cupcakes cook better on a low setting over a longer period rather than high heat. Place a Red Gingham Cucpake case into the bottom of a muffin pan. Fill the pan with as many cases as you need.

- Step 2
- Make your basic cake batter (I used a classic vanilla) and spoon an even amount into each cupcake case. I find 1-2 heaped tablespoons is great. Bake your cupcakes for around 20-25 minutes. They should rise slowly and evenly. If they crack at the top, the oven is too hot. If they veer towards to the left or right, then you have a hot spot in your oven so you should rotate the tray half way during cooking to try and compensate. Onced cooked - let them cool.
- Step 3
- Make a batch of Butter Frosting. (recipes can be found on the back of the pure icing sugar packet or go to Robertsconfectionery.com.au for one using Crisco Shortening. Add a few drops of Raspberry Flavoured Colouring. It will tint your icing red as well as giving it a delicious Raspberry Flavour. This will give your cupcakes a real taste difference that will leave your guests wanting more and more!!

- Step 4
- Pipe the Raspberry frosting onto each cupcake. Using a dry paintbrush dip it into the pot of Non Toxic Gold Decorators Glitter. Flick or sprinkle the glitter over the top of the frosting. You can also use your fingers.

- Step 5
- Insert a Rudolph cupcake topper into the top of your finished cupcake. Repitition is what makes cupcakes looks so inviting to eat, so cover a pretty plate or stand in these rudolph cupcakes and there is no way they can't look fabulous.
